Orange-fleshed sweet potatoes are considered to have a regular diet in the consumer food chain to improve nutritional food security, with a special emphasis on vitamin A deficiency. A study was conducted to determine the proper combination of different levels of nitrogen (0, 23, and 46 kg N ha⁻¹) and phosphorus (0 and 46 kg ha⁻¹ of P₂O₅) fertilizers for the optimum nutritional, anti-nutritional, and vitamin composition of five orange-fleshed sweet potato varieties (NASPOT-12, Kulfo, Kabode, Alamura, and Dilla). The Alamura variety grown at 23 kg ha⁻¹ N and 46 kg ha⁻¹ P₂O₅ produced the highest calcium, vitamin E, zinc, and tannin contents. The Kabode variety contained the highest amount of protein, while the Alamura and Kulfo varieties had higher anti-nutritional factors such as tannins and phytates, respectively. The NASPOT-12 variety, grown under 23 kg ha⁻¹ N and 46 kg ha⁻¹ P₂O₅, demonstrated superior performance in proximate compositions (fat, ash, carbohydrates, and energy), minerals (magnesium and iron), vitamins (β-carotene and vitamin C), and functional properties (water absorption and gelatinization temperature). This study emphasizes the necessity of proper nutrient management since fertilization can increase positive and negative aspects of food values, affecting the mineral profile and protein digestibility. It also accentuated the importance of varietal selection in order to enhance the nutritional values of orange-fleshed sweet potato to help in the fight against malnutrition, thus enhancing food security.
